Rarely is there an opportunity for individuals to purchase something truly exceptional in the Irish Whiskey cask landscape.

Single casks of whiskey are the truest expression of our distillery. Each cask whiskey has its own unique flavour personality, differing slightly from its cask “siblings.” Each oak cask is crafted together using 26 or more oak staves, where each stave has a different grain pattern. Each cask has its own micro-climate and bio-culture, giving both subtle and significant differences in the resulting whiskey flavour.

These casks contain luxury whiskeys with genuine provenance and are selected from our reserve of the finest aged casks produced by our founding Master Distiller Noel Sweeney.

These extraordinary casks are aged between 21, 22 & 23 years old in first-fill American ex-bourbon barrels with a significant number having been selected for re-casking into the finest fortified wine and sherry casks over 6 years ago. Choose from Madeira to Moscatel, Ruby or Tawny Port, PX to Oloroso Sherry, Mezcal to Amarone casks. These options, by cask, are unrivalled in the whiskey industry. Exceptional again are our small number of single vineyard, single grape, single malts finished in casks from Grand Cru Classé Château Bellefont-Belcier in Saint Émillion.

CHOCOLATE MALT OAT SINGLE POT STILL

“The first spirit is a Chocolate Malt Oat Pot Still. For me, there is nothing better than a whiskey and a porter, so I thought let’s try and combine them. Chocolate Malt introduced roasted flavours of cocoa to the spirit while the addition of oats adds a sweetness and texture. On the finish, the chocolate flavours evolve into mocha and waves of espresso.”

CRYSTAL MALT OAT POT STILL

“The second spirit is a Crystal Malt Oat Pot still. Crystal Malt is my favourite malt, full stop. As the truck is unloading I will take a little bag for my granola. This malt is produced by kilning at a high humidity. This liquefies the sugars in the grain which form a single sugar crystal. This sugar crystal adds sweetness, while at the same time the kilned husk of the malt adds a charred crust flavour to the spirit. The oats add more sweetness and texture which combine with the fruitiness from the yeast to produce a flavour kin to a melted wine gum.”

Our Single Malt is born of Powerscourt, an estate and distillery of extraordinary spirit. Locally sourced barley has been expertly distilled with pure water from the estate to reveal, in time, one of the finest Single Malt Irish Whiskeys available in cask.

Aged in a 200 litre first fill ex-American Oak Bourbon barrel, for a period of 8 years or more. Your single malt cask will remain on site in our Cask Estate warehouse, where the mountain air provides a unique maturation influence on this terroir driven whiskey, under the watchful eye of our award-winning Master Distiller, Paul Corbett.
